This date ‘n’fig bar is an easy peasy recipe and a healthy one too!

10 Medjool or Kimia (deseeded) dates are the best to use because they are soft, inherently sweet and delicious.
6 Dried Figs soaked in very little hot water (unsulphured and unsweetened for the best flavor)
1 1/2 cups mixed nuts roughly chopped and toasted.
3 tbsp toasted Poppy seeds spread on a flat plate.

Blitz the Dates to a coarse paste
Add in 1 tsp clarified butter/ Ghee to a pan and toss in the date paste and cook just for a minute or so.
Take the pan off the heat, add in the date paste, chopped Figs and the toasted mixed Nuts.
Give a good mix and shape into a log.
Roll the log over the toasted Poppy seeds.
Place the log on a butter paper, roll it gently and place it in the fridge for two hours or so.
Once it is set, slice into thick slices and serve.
They stay good in the fridge for a week!
